The Host override a plugin’s :authority write produced. Rides
the request extensions from the forward build to the upstream
dispatch (upstream::UpstreamHandle owns the forwarded Host):
the header the plugin named replaces the picked endpoint’s
authority there, and ONLY there — the dial target and the URI
authority stay the balancer’s pick (a plugin shapes the Host
header, never which origin the gateway dials).
